Hidatsa Shield Figure

Phaseolus vulgaris

A bean from the Hidatsa tribe in the Missouri River Valley of North Dakota. The large seed has a distinct brown-red “shield” on a white bean. Historically grown in corn fields with squash and sunflowers. A very flavourful, productive variety that was boarded onto Slow Food USA’s Ark of Taste in 2005.
